Very dry with good minerality and a hint of cream.
Balanced, elegant Crémant de Limoux, with no rough edges. The Chardonnay gives the wine brightness and a lively acidity, the Chenin Blanc adds richness and texture, and the Pinot Noir adds depth to the wine. Given that this is Collin’s entry-level sparkling wine, this is an impressively balanced and complex wine.
Winemaker Philippe Collin’s family had been making wine in Champagne for many generations, but buying land in that region is very difficult, so he decided to move farther south and try his hand at sparkling wine in a new terroir.
